I’m not a cake person. But, if I’m going the cake route, it’s going to be the Pillsbury Funfetti kind, dolled up with a package of pudding mix, completed with store-bought frosting.
A few weeks ago, I had the urge to bake this particular cake from scratch. A quick Pinterest search, and I settled on this recipe from Sally’s Baking Addiction for Easy Homemade Funfetti Cake.
Anything with easy in the title is worth a try. Especially when you have a tiny crawler who might decide at any moment she needs to be in the comfort of your arms for the next hour.

This was my end result. Colorful. Cute. And yet not my favorite. It lacked flavor and had a texture kin to bread.
This might just be a taste buds difference though, folks. I happen to LOVE Sally’s recipe for Soft and Chewy Oatmeal Chocolate Chip Cookies so she obviously knows what she’s doing.
She also has another recipe for Funfetti cake: a Funfetti Layer Cake. Worth a try because I would love to find a homemade cake as yummy as the one from the store.
